Macadamias contain a higher level of mono-unsaturated fatty acids than any other commercial edible nut. The fatty acid composition is similar to that of olive oil. Palmitoleic fatty acid, which is mono-unsaturated, exists at a much higher level than in any other oil. The natural oils in macadamias contain 80% monounsaturated fats, the highest of any oil including olive oil.
